PROSCIUTTO MELON BITES WITH LIME DRIZZLE Recipe

Ingredients
  • 16 cubes cantaloupe (1 inch cubes)
  • 16 cubes honey dew melon (1 inch cubes)
  • 16 very thin slices of prosciutto, cut inch half lengthwise (1/4 ounce )
  • 1 tablespoon fresh lime juice
  • 2 teaspoons olive oil
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons thinly sliced fresh mint
  • 16 wooden skewers (4 inch )
Directions
Wrap each cantaloupe cube and each honey dew cube with 1/2 a slice of prosciutto ham. Thread 1 wrapped cube of each onto skewer. Arrange skewers onto serving platter. In small bowl combine the oil, juice, pepper, stirring with a whisk. Drizzle evenly over the skewers. Sprinkle with chopped mint.
