Roast Salmon with Vegetables Recipe

  • 1 pound small red potatoes, halved
  • 1/2 pound mushrooms
  • 3 tablespoons olive oil
  • Salt and black pepper
  • 1 pound skinless salmon fillet
  • 1 tablespoon red wine vinegar
  • 1 tablespoon mustard
  • 2 tablespoons dried parsley
Heat oven to 400°F. Mix potatoes, mushrooms, 1 T. of olive oil, and 1/2 tsp. of salt and pepper in a baking pan. Bake for 20 minutes.

Place the salmon in the baking pan with the vegetables. Sprinkle salmon with 1/4 tsp. salt and pepper. Bake uncovered for approximately 12 to 15 minutes.

Mix the vinegar, mustard, parsley, 2 T. of olive oil, and 1/4 tsp. salt and pepper. Drizzle over the salmon and vegetables before serving.
