Chopped Cutlets (Russian Hamburgers) Recipe

  • 1/2 pound beef
  • 3/4 pound pork
  • 1/4 pound dry white bread
  • 1 cup milk (broth or water can be substituted)
  • 4 onions (small)
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 cup bread crumbs
  • Salt and pepper to taste
Wash and cut the meat in small cubes (1x1 inch). Pass all of it through the a meat grinder (or buy ground beef and ground pork). Mix together with 2 onions and white bread soaked in milk (2-3 min). Slice or dice the rest of the onion and fry in the pan, (after cooling) mix it with prepared meat.

Add some salt and pepper into the meat, add one egg, stir up well. Shape meat into cutlets (like flat hamburgers), roll them in bread crumbs.

Fry in 2 T vegetable oil on both sides (maybe 2 min. on each side), till they become brown. Put stove on "bake" and preheat on 375°F. Cook in the oven for 10 minutes. Turn off the heat but keep in oven another 5-7 minutes before taking it out.

Serve with french fries or mashed potatoes, 2-3 cutlets person.
