Zucchini Bars 26 Recipe

Ingredients
  • 3 Eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 2 cups grated zucchini, drained
  • 1 cup nuts, chopped
  • 1 cup steamed raisins, drained
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon Salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • Frosting
  • 1 package cream cheese (3 ounce pkg)
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
Directions
Mix together eggs, sugar and oil. Add zucchini, raisins, nuts and vanilla. Sift dry ingredients together and add to zucchini mixture. Mix thoroughly. Pour into greased 10"x15" jelly roll pan. Bake at 350° for 50 minutes or until done. Frosting: Mix and spread on cooled bars.
