SPANISH "PAELLA" Recipe

Ingredients
  • 1 clove garlic, minced
  • 1 tablespoon Extra virgin olive oil
  • 1/2 pound sweet Italian sausage links
  • 1/2 pound boneless skinless chicken breasts, cut inch 1 inch pieces
  • 1 cup uncooked rice
  • 1 cup onion, chopped fine
  • 1 1/2 cups chicken broth
  • 1 can diced stewed tomatoes (small can)
  • 1/2 teaspoon sweet paprika
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon ground saffron
  • 1/2 pound medium shrimp, peeled and tails off
  • 1/2 cup frozen green peas
Directions
Heat garlic and oil in skillet. Take sausage out of casings. Brown sausage and chicken in garlic and oil about 10 minutes. Remove sausage and chicken from oil. Add uncooked rice to skillet with onion. Cook until lightly browned (about 5 minutes). Add chicken broth and tomatoes and spices. Bring to a boil. Reduce heat, cover and simmer for 10 minutes. Add shrimp, peas, sausage, and chicken. Cover and simmer for 10 minutes. Make sure rice is cooked and liquid is absorbed.
