Peach Cobbler Muffins Recipe

Ingredients
  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 cup salt
  • 6 tablespoons butter chilled and diced
  • 1 cup milk
  • 1 1/2 cups coarsely chopped, peeled peaches, fresh or frozen
  • 1 1/2 tablespoons butter melted
  • 1/2 teaspoon cinnamon
Directions
Preheat oven to 400°. Grease muffin tins or line with paper cups. In bowl, combine flour, sugar, baking powder, and salt. Using a pastry blender or two knives, cut in diced butter until crumbly. Stir in milk. Add peaches and stir to distribute evenly. Divide dough evenly among prepared cups. Drizzle tops with melted butter. Combine 4 tsp. of sugar and the cinnamon and sprinkle over muffins. Bake 25 minutes or until muffins are golden brown.
