Mom's Zucchini Cake Recipe

  • 1 box yellow cake mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla
  • 2 cups grated zucchini, dont peel
  • 1/2 cup raisins
  • 1/2 cup walnuts
Beat cake mix, eggs, oil, cinnamon and vanilla together for 6 to 7 minutes. Fold in grated zucchini, raisins and nuts. Bake in a greased and floured 10" tube pan at 350° for 40 to 50 minutes. May use toothpick to test doneness. Cool in pan for 10 minutes. Then let cool completely on tube pan bottom before removing completely. Cake may be glazed or sprinkled with powdered sugar. Serves 12 to 16.
