No Egg, No Milk, Applesauce Cake Recipe

Ingredients
  • 3 3/4 cups applesauce, unsweetened
  • 3 teaspoons baking soda, heaping
  • 3/4 cup melted solid shortening (1/2 cup butter, 1/4 cup shortening)
  • 2 1/8 cups white sugar
  • 1 teaspoon cloves
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 cups raisin (1 cup white, 1 cup dark)
  • 2 cups chopped walnuts (1 cup black walnuts, 1/2 cup walnuts, 1/2 cup pecans)
  • 3 1/2 cups regular flour
Directions
Preheat oven to 350 and grease and flour a tube or bundt pan. Heat applesauce and stir in baking soda until it foams. In a large bowl combine melted shortening and sugar, mix well. In a separate bowl, mix cloves, cinnamon, nutmeg, and flour. Add the dry ingredients along with the applesauce-soda blend to the shortening-sugar mixture. Stir vigorously. Add raisins and nuts to the mixture. Pour into your prepared pan and bake for 1 hour 15 minutes or until done. Do not overcook. Let the cake cool in the pan for at least 10 minutes before gently releasing it onto a cooling rack.
