Sweet Potato Chocolate Eclair Recipe

  • 1 can sweetened condensed milk
  • 1 1/2 cups cold water
  • 1 1/2 packages instant vanilla pudding (3 1/2 ounce pkg)
  • 1 cup sweet potatoes (crushed, mashed)
  • 1 cup sugar
  • 8 ounces Cool Whip
  • 1 box graham crackers
  • SAUCE:
  • 1 cup sugar
  • 1/3 cup cocoa
  • 1/3 cup evaporated milk
  • 1/4 cup margarine
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
In mixing bowl, combine sweetened condensed milk and cold water. Add pudding mix, beating until well blended. Mix in sweet potatoes and sugar. Chill mixture for 10 minutes.

Fold in Cool Whip until well blended.

Layer a 9x13" pan with graham crackers. Layer 1/2 the pudding mixture, another layer of graham crackers, then pudding mixture and top with graham crackers.

To make chocolate sauce, mix sugar and cocoa in a saucepan to remove lumps. Slowly stir in milk and cook over low heat. Keep stirring until mixture boils; boil for 1 minute. Remove from heat and add margarine, salt and vanilla. Stir and pour over graham crackers.

Refrigerate or freeze.
