Graham Cracker Fruitcake Recipe

  • 4 cups pecans
  • 1 pound English Walnuts
  • 1 pound candied cherries
  • 1 pound graham crackers
  • 1 pound seedless raisins
  • 1 can evaporated milk (tall can)
  • 1 pound marshmallows
Chop pecans, walnuts and cherries, add raisins. Mix together well. Crush graham crackers, add to the first mixture, mixing well. Using a double boiler, add enough water to the bottom boiler to barely touch the top boiler. Pour milk into the top boiler and add marshmallows. Heat water at medium heat until marshmallows are melted. Pour hot milk/marshmallow mixture over the graham cracker mix. With your hands, mix everything making sure the graham cracker mixture is moistened well. Shape and press in container of your choice - a mold is an idea. Refrigerate at least a week before slicing. No baking!
