Spinach Salad with Strawberries Recipe

This delicious fresh spinach salad is a perfect addition to any summer meal. Using seasonal produce such as spinach and strawberries makes for a flavorful and nutritious salad. Blueberries can be substituted for strawberries, or added for a colorful touch.

Ingredients
  • SALAD INGREDIENTS:
  • 8 ounces fresh spinach leaves (use baby spinach or tear larger spinach leaves into pieces)
  • 1 1/2 cups fresh strawberries, sliced (or substitute whole fresh blueberries)
  • 1/2 cup pecans, toasted until they just start to brown slightly
  • 1/2 cup crumbled blue cheese or goat cheese
  • 1/4 cup thinly sliced red onion (optional)
  • DRESSING INGREDIENTS:
  • 2 tablespoons Balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons brown sugar
  • 1 teaspoon Dijon mustard
  • Kosher salt and freshly ground black pepper to taste

  • Combine spinach leaves, berries, cheese and pecans (and red onion, if desired) in a large salad bowl.
  • Shake dressing ingredients together in a jar with a lid, then drizzle over the salad ingredients.
  • Serve immediately.
