Cheesy Broccoli Cornbread Recipe

Ingredients
  • 1 stick unsalted butter
  • 1 onion - chopped
  • 1 package frozen chopped broccoli - thawed
  • 2 cloves garlic - minced
  • 2 boxes corn muffin mix
  • 1/2 cup milk
  • 8 ounces ricotta cheese
  • 4 eggs
  • 1 teaspoon salt
  • 1 cup Cheddar cheese, grated

  • Preheat oven to 375 degrees F. Spray a 9x13 inch pan with non-stick cooking spray.
  • In a large skillet melt butter over medium heat. Saute onions and broccoli until soft. Add garlic and cook 1 minute more.
  • In a large bowl, mix together corn muffine mix, milk, ricotta, eggs, salt and cheese.
  • Pour in vegetables and stir to combine.
  • Pour mixture in a prepared pan and bake in oven for 25-30 minutes, or until golden brown.
