Lori's Banana Cake Recipe

Ingredients
  • 1 cup butter or margarine
  • 2 cups sugar
  • 4 eggs
  • 3 cups flour
  • 2 teaspoons Baking Soda
  • 4 ripe bananas, mashed
  • 1 cup nuts (optional)
Directions
Preheat oven to 350°. Cream shortening and sugar. Add eggs, then add dry ingredients. Add bananas last. Bake in a 13 x 9 inch pan for 30 minutes to 1 hour. Check the cake at 30 minutes, but it most likely will need at least an additional 15 minutes.

This cake is great iced with any sort of frosting, OR as soon as the cake is finished, cut slits into the top of it, but don't cut the whole way to the bottom. Drizzle with caramel ice cream sauce. Sprinkle half a bag of butterscotch chips on top of the caramel sauce. Allow cake to cool completely, then ice with one can of your favorite icing. Top with additional caramel sauce and butterscotch chips.
