Banana Pineapple Cake 2 Recipe

Ingredients
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon Salt
  • 2 cups chopped bananas
  • 1 cup crushed pineapple (drained)
  • 1 cup vegetable oil
  • 2 eggs (beaten with fork) (large)
  • 1 1/2 teaspoons vanilla
  • 1 cup chopped pecans (optional)
  • ICING: (optional)
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 4 1/2 cups powdered sugar
  • 1 teaspoon vanilla
Directions
Mix flour, sugar, baking soda, cinnamon and salt together by hand and set aside. Next, mix bananas, crushed pineapple (drained), vegetable oil, eggs (beaten with fork), and vanilla with large spoon or whisk. Add pecans last(optional) DO NOT use mixer. Then pour in the dry ingredients and mix with spatula until well blended. Then pour in greased 9x13 dish or pan. Preheat oven to 350 degrees.Bake 40-45 minutes until toothpicks comes out clean. Cool well on wire rack.

Icing (optional):

Crema together cream cheese and butter. Slowly add powdered sugar and vanilla. Mix with mixer until smooth.
