Coconut Cream Pie 35 Recipe

Ingredients
  • 3/4 cup sugar
  • 5 tablespoons self-rising flour
  • 2 1/2 cups milk
  • 3 eggs (large)
  • 2 cups coconut
  • 1 pie crust
  • 1 teaspoon vanilla
  • 1 teaspoon butter
Directions
Before I start brown pie crust in oven. Mix sugar & flour together, add milk. Separate eggs, add egg yolk to mixture and mix will. Cook in microwave 15 minutes or until thick. If it gets to thick just beat with a mixer until smooth. Add coconut, vanilla & butter. Leave some coconut to sprinkle on top of egg white before browning. Beat egg white until they form a peak, add 1/2 C. of sugar and mix again until if forms another peak. Sprinkle coconut on top & brown in oven 10-15 min. or until brown.
