Dessert Crepes Recipe

  • Crepe Recipe
  • 1 cup milk
  • 2 tablespoons butter
  • 2 eggs (beaten)
  • 1/2 cup sifted flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Crepe Filling
  • 1/2 pint whipping cream
  • 1 tablespoon Powdered Sugar
  • 1 can crushed pineapple (drained) (small can)
  • 1/2 cup coconut
Warm milk and butter. Beat in remaining ingredients. Pour enough batter to coat bottom of 4 or 5 inch skillet that has been greased. Cook 1 minute; turn and cook until delicate brown. When cool, place between layers of waxed paper, dusted with powdered sugar. These can be frozen and used as needed.

Filling -

Whip the cream and add powdered sugar. Fold in pineapple and coconut. Refrigerate until ready to use. Place several spoonfuls of filling on a crepe; roll up. Over the top put whatever fruit topping you wish - fresh strawberries are especially good.
