Scotland Aberdeen Plum Cake Recipe

Ingredients
  • 1 cup or 2 cubes butter or margarine
  • 1 cup Brown Sugar
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon Salt
  • 3 Eggs
  • 1 cup raisins or currants
  • 1 cup mixed candied fruit peel
  • 1 tablespoon lemon juice
  • 1 teaspoon Lemon Peel
  • 1 cup chopped nuts (Almonds, Walnut, or Pecans)
Directions
Sift flour, baking powder, and salt. Add fruit and nuts. Set aside. Cream butter/marg. with sugar well. Beat eggs well, add sugar and butter mix. Add flour mix in thirds. Mix thoroughly after each addition. Place in bread pans or 3 small foil bread tins or 1 large. Bake at 325° for (large) 1 hour, (small) 45 min.
