Ingredients
  • 2 cups cranberries
  • 1 banana (large)
  • 1/2 cup sugar
  • 2 cups Vanilla Wafer Crumbs
  • 6 tablespoons melted butter
  • 1/2 cup butter
  • 1 cup Sugar
  • 1 egg
  • 1/2 cup chopped walnuts
  • 1 package Cool Whip
Directions
Grind 2 cups of cranberries in a food processor. Dice the banana and combine with the cranberries and 1/2 cup of sugar. Set aside. Combine 2 cups of vanilla wafer crumbs and 6 tablespoons of melted butter. Place 1/2 of the crumb mixture on the bottom of a 9x9x2 pan or dish. Cream 1/2 cup butter and 1 cup of sugar until fluffy. Add 1 egg and beat until fluffy. Fold in 1/2 cup of walnuts. Spread this mixture over the crumb mixture. Then top this with the cranberry mixture. Top with the Cool Whip and remaining vanilla wafer crumb mixture. Chill 6 hours or overnight.

"My mother used to make this when I was little. She called it Cranberry Delight, which is a much better name for this fabulous dessert! I make it now but with homemade whipped cream. Everyone raves about it, even if they aren't big fans of cranberries!"
