Ambrosia tapioca Recipe

  • 1/3 cup sugar
  • 1/4 cup quick cooking tapioca
  • dash of salt
  • 2 1/2 cups orange juice
  • 1 cup orange section
  • 1/4 cup chopped dates
  • 1 3/4 cups lacked coconut
Combine sugar, salt, and orange juice in medium saucepan. Let stand 5 minutes. Cook over medium heat, stirring constantly, until mixture boils.

Cool slightly. Stir in orange sections and dates. Chill at least 1 hour. Before serving, spoon tapioca into dessert dishes and sprinkle with flaked coconut.
