Apple Cake with Caramel Topping Recipe

Either as a dessert or coffee cake, this apple cake is delicious. And it gets better the longer it sets as the caramel topping soaks into the cake. Moist and delicious, perfect for the fall when apples are fresh.

Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 1/4 cups vegetable oil
  • 2 teaspoons vanilla
  • 3 eggs
  • 3 cups apples, peeled, diced
  • 1 cup walnuts, chopped (optional)
  • CARAMEL TOPPING:
  • 1 stick butter
  • 1 1/4 cups brown sugar
  • 1/3 cup milk

Preheat oven to 350°. Lightly grease and flour a 9x13 inch baking dish.

In a large bowl, combine flour, salt, soda and sugar. Make a well in the center and add eggs, oil and vanilla. Mix well.

Fold in diced apples and walnuts, if desired.

Spread into prepared dish; bake for 40-50 minutes. Cake is done when toothpick inserted in center comes out clean.

When cake is done, punch holes in it with a toothpick and pour caramel sauce over hot cake.

For Caramel Sauce, heat all ingredients together over medium heat. Bring to a boil, stirring constantly. Let boil for about 2 minutes. Pour over warm cake.
