Coconut Milk Rice Pudding Recipe

Ingredients
  • 1 can lite coconut milk (may use regular for a richer pudding) (14 ounce can)
  • 1/2 cup sugar
  • 2 cups cooked rice
  • 1 teaspoon gf vanilla extract
  • cinnamon to taste
Directions
Heat coconut milk in saucepan, stirring frequently. Add sugar and vanilla and continue heating until mixture begins to thicken and sugar is dissolved, about 15 to 20 minutes. Add rice and continue to stir over heat for a few minutes. May serve warm or cold. Pudding will thicken more after being chilled. Top with cinnamon, raisins or other toppings of choice.
