White Zucchini Cake Recipe

Ingredients
  • 1 cup cooking oil
  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups Flour
  • 2 cups shredded zucchini
  • 1/2 teaspoon Baking Powder
  • 1/2 tablespoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla
Directions
Beat together sugar, oil, and eggs. Add: flour, baking soda, baking powder, salt and vanilla. Fold in zucchini. Pour in to a well greased jelly roll pan. Bake at 350° for 25 min or until tests done.

Frost with a cream cheese frosting.
