White Zucchini Cake Recipe

  • 2 cups sugar
  • 1 cup cooking oil
  • 4 eggs
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups shredded zucchini
Beat together sugar, oil and eggs.

Add flour, baking soda, baking powder, salt and vanilla.

Fold in zucchini.

Pour in to a well-greased jelly roll pan.

Bake at 350° for 25 minutes or until toothpick test says done.

Frost with a cream cheese frosting, if desired.
