Butterscotch Pie 18 Recipe

Ingredients
  • Filling
  • 3/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon Salt
  • 3 cups milk
  • 3 egg yolks, slightly beaten
  • 2 tablespoons butter
  • 1 1/2 teaspoons Vanilla
  • 1 baked pie crust (9-inch)
Directions
The filling can be made in the microwave. Use a large (2 qt.) glass bowl and heat and stir, while watching to see when mixture has boiled and is thick. Add butter and vanilla.) OR Cook and stir brown sugar, cornstarch, and salt over medium heat until mixture boils: let boil 1 minute. Remove from heat and add butter and vanilla. Pour into pie crust and cover with plastic wrap until cool. Refrigerate. Serve with whipped cream.
