FRESH APPLE CAKE 25 Recipe

Ingredients
  • 6 fresh apples, peeled and sliced
  • 3 tablespoons lemon juice
  • 2 cups sugar
  • 2 Eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon Salt
  • 2 teaspoons Baking Soda
  • 2 teaspoons cinnamon
  • raisins
  • nuts
Directions
Preheat oven to 325°. Lightly grease a 10 inch tube pan with shortening and coat with flour. Combine apples and lemon juice; add sugar;; let stand. In a mixing bowl, beat eggs slightly, add oil and vanilla; mix together with the flour, salt, baking soda, and cinnamon. Mix alternatively with the apple mixture. Gently fold in raisins and nuts. Bake for 1 hour and 45 minutes or until done.
