Grilled Chicken with Citrus Marinade Recipe

Plan ahead for this recipe so the chicken can marinate overnight for better flavor. Then just throw them on the grill the next day for a weeknight meal. The chicken is both sweet and sour.

Ingredients
  • 1/4 cup cider vinegar
  • 3 tablespoons coarse-ground mustard
  • 3 cloves garlic , minced
  • 1 lime , juiced
  • 1/2 lemon , juiced
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup olive oil
  • 6 chicken breasts , boneless and skinless

  • In a medium bowl, combine the vinegar, mustard, garlic, lime and lemon juice, brown sugar, salt and pepper. Whisk in the olive oil.
  • Place chicken in a ziploc bag and pour marinade in. Close and marinate 6-8 hours, or overnight.
  • Preheat an outdoor grill for medium-high heat.
  • Place chicken on the prepared grill, and cook 6-8 minutes per side, until juices run clear. Discard marinade.

"This chicken was so tender and juicy! I tend to overcook mine and it turns dry but not this recipe. The citrus in the marinade helps to "precook" the chicken, so be sure to follow the directions and not overcook so it stays moist for you, too!"
