Irish Apple Cake Recipe

Ingredients
  • 1/4 cup butter
  • 1 cup Sugar
  • 1 egg, beaten
  • 4 Granny Smith Apples - cored, peeled and diced (2 cup)
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup all purpose flour
Directions
Preheat oven to 350° and generously grease a 8 x 8" cake pan. In large bowl, cream butter and sugar together until light and fluffy. Add eggs, apples, nuts and vanilla to the butter mixture and mix well. Sift dry ingredients and mix well. Add to batter. After stirring well, pour batter in 8 x 8 pan. Bake about 45 minutes or until cake is lightly browned and center is done. Let cake cool in pan for 5 minutes. Remove and serve hot or cold with whipped cream or vanilla ice cream.
