Vegetable Cake Recipe

Ingredients
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons hot water
  • 3 Egg Yolks
  • 1 tablespoon cinnamon
  • dash of nutmeg
  • 1 1/2 cups sugar
  • dash salt
  • 1 cup oil
  • 1 cup grated carrots
  • 1 cup grated beets
  • 1 cup chopped nuts 3 egg whites
Directions
Cream egg yolks, sugar and hot water. Sift dry ingredients. Add alternately with oil. Then add vegetables, one at a time. Mix well. Add nuts. Fold in stiffly beaten egg whites. Bake in 2 greased and floured loaf pans in 350° oven for 1 hour or until done.
