Butter Brickle Ice Cream Recipe

Ingredients
  • 2 cups Rice Chex, broken up
  • 1/2 cup melted margarine
  • 1 cup coconut flakes
  • 1 cup Brown Sugar
  • 1 cup nuts (pecan pieces or walnut pieces)
  • 1/2 gallon ice cream (Butter Pecan, Macadamia Nut or Butter Brickle), softened
Directions
Mix all ingredients together (except ice cream) and spread on cookie sheet. Put under broiler (watch it very carefully; it burns easily.) Brown it, then cool and spread 1/2 in bottom of 9 x 13" pan or dish. Spread softened ice cream over bottom layer. Crumble the rest of mixture over the top. Freeze. Serves 12 generously.
