This fruit salad is a great side dish to any holiday meal. The sweet crushed pineapple with the creamy whipped cream are perfect. Feel free to use any small pasta instead of the rice if you prefer.

  • 2 cups water
  • 1 cup uncooked white rice
  • 1/4 cup white sugar
  • 30 ounces crushed pineapple
  • 1 cup miniature marshmallows
  • 1 cup heavy cream, whipped

  • In a medium saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Cool.
  • In a large bowl combine the cooked, cooled rice, sugar, pineapple and marshmallows. Fold in the whipped cream.
  • Chill for at least 4 hours before serving.
