Microwave Coconut Pie 2 Recipe

Ingredients
  • 3 Egg Yolks
  • 1/2 cup sugar
  • 1/2 box coconut (2 cups)
  • 1/4 cup plain flour (all-purpose)
  • 2 1/2 cups milk
  • 2 tablespoons margarine
  • 1 teaspoon vanilla
  • Meringue
  • 3 egg whites
  • 1/2 teaspoon cream of tarter
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla
Directions
Pie

Mix sugar & flour, add milk & egg yolks together. Microwave on high for about 6 minutes until thick. Stir 2 or 3 times during cooking. Pour into baked pie shells.

Meringue

Beat egg whites, sugar, tarter, vanilla until stiff enough to form peaks.

Cover pie with mixture and bake at 400 deg. for 10 minutes.
