Amazin' Raisin Cake Recipe

  • 3 cups plain, unsifted flour
  • 2 cups sugar
  • 1 cup Hellmans Mayonnaise
  • 1/3 cup milk
  • 2 Eggs
  • 2 teaspoons Baking Soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon Salt
  • 1/4 teaspoon ground cloves
  • 3 cups peeled apples (diced/chopped fairly small, and Granny Smith apples are good)
  • 1 cup seedless grapes
  • 1/2 cup coarsely chopped walnuts
  • Brownstone Frosting
  • 2 cups white sugar
  • 2 sticks margarine
  • 1 can evaporated milk (small can)
  • 1 teaspoon vanilla
Grease and flour two, 9-in round cake pans. In large bowl with mixer at low speed, beat first 10 ingredients for 2 minutes, scraping bowl frequently. Stir in apples, raisins and nuts. Pour into pans. Bake at 350° for 45 minutes; cool. Frost with Brownstone Frosting, which follows. Brownstone Frosting: Combine sugar, margarine and milk. Cook about 20 minutes or to a softball stage. Stir about all the time while cooking. Add vanilla and beat with mixer which will take several minutes. You can tell when it gets to frosting consistency to spread between layers, top and sides. May need to make it twice to have enough to frost large cake.
