COCONUT CREAM PIE 5 Recipe

Ingredients
  • 1 baked, 9 inch pie crust
  • 2/3 cup sugar
  • 2 1/2 tablespoons cornstarch
  • 1/2 teaspoon Salt
  • 1 tablespoon flour
  • 3 egg yolks, slightly beaten
  • 1 tablespoon butter
  • 1 1/2 teaspoons vanilla
  • 3 cups milk
  • 3/4 cup moist flaked coconut
  • sweetened whipped cream
Directions
Mix sugar, salt, cornstarch, and flour in a heavy saucepan. Gradually stir in milk, cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. remove from heat. Stir a little of the hot mixture into beaten egg yolks, then blend yolks into hot mixture in saucepan. Boil 1 minute more, stirring constantly. Remove from heat. Swirl in butter and vanilla. Cool, stirring occasionally. Just before pouring into pie shell,fold in coconut. Chill thoroughly.
