Glorious Sausage Pie Recipe

  • 3 sweet sausage links
  • 6 eggs
  • 1/2 cup ricotta cheese
  • 1/2 package frozen spinach - thawed and chopped
  • 1/2 cup parmesan cheese
  • 1/2 onion - chopped
  • 1/2 package shredded mozzarella
  • 1 deep dish pie crust or 2 regular
  • Get out frying pan and coat with a little oil.
  • Heat it up and add onions.
  • Cook onions until soft.
  • Remove casing from the sausage and brown.
  • Remove excess fat.
  • Squeeze water out of spinach and add to the pan.
  • Saute for a few minutes, then allow mixture cool a little in fridge.
  • While waiting, get a bowl and add eggs, ricotta, parmesan cheese and mozzarella cheese, salt and pepper to taste.
  • Mix well until everything melds together.
  • When sausage mixture is cool, add it to the cheese and mix well.
  • Then pour into frozen pie crusts.
  • Can be with a top crust or a single.
  • Bake for 1 hour at 375 degree F. pre heated oven.
  • Watch for overbrowning of the crust.
  • Serve hot or cold.
