Banana Carrot Cake Recipe

Ingredients
  • 1 cup sugar
  • 1 cup bananas, mashed
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1 cup oats
  • 1 cup carrot, shredded
  • 1/3 cup pecans, chopped (optional)
  • FROSTING:
  • 1/2 stick butter, softened
  • 8 ounces cream cheese, softened
  • 1 banana, mashed
  • 2 pounds powdered sugar
  • 1 teaspoon vanilla
  • pecans, chopped (optional)

Heat oven to 350°. Grease a 9 inch square baking pan.

Beat together sugar, bananas and oil; add eggs, beating well after each addition.

Add flour, baking powder, salt, soda, cinnamon and cloves; mix well. Stir in oats and carrots.

Pour into prepared pan, sprinkle with nuts, if desired. Bake 40-45 minutes or until done.

NOTE: You can double the recipe for a 9x13-inch pan and then you will have some batter left over for cupcakes or small loaf.

For frosting, beat butter and cream cheese until smooth, add 1 smashed banana. Add powdered sugar and vanilla. If it is too thick for spreading, add another banana or a little milk. Sprinkle nuts over the top, if desired.

Cream cheese frosting with a banana mixed in makes this cake extra special. Not to mention the combination of banana and carrots will turn into a moist and delicious cake. Put them together and you have a little piece of sweet heaven.
