  • 1 pound Italian Sausage
  • 1 package frozen country style hash browns
  • 8 eggs
  • 1/2 cup onions and red pepper, chopped
  • 1 cup cheddar cheese, grated
  • 1 1/2 cups heavy whipping cream
  • Salt and Pepper to taste
  • 1/2 teaspoon ground nutmeg
  • Remove casing from sausage and brown.
  • Drain off fat, and add onions and peppers and continue cooking until vegetables are tender. Set aside.
  • Combine eggs, whipping cream, salt, pepper, nutmeg in large bowl and whisk together. Set aside.
  • Place entire package of frozen hash brown potatoes on bottom of a large rectangle greased casserole dish.
  • Next add sausage on top of potatoes, then top with cheese, next add egg mixture.
  • Bake in a 350 degree F. oven for about 45 minutes or until eggs are set.
