Ingredients
  • PICO DE GALLO:
  • 3 tomatoes - chopped
  • 1/4 onion - finely diced
  • 1/2 green pepper - finely diced
  • salt and pepper to taste
  • 1 jalapeño - finely diced
  • 2 tablespoons lime juice
  • QUESADILLAS:
  • 1 tablespoon butter
  • 1/2 onion - finely diced
  • 1/2 green pepper - finely diced
  • 2 cloves garlic - minced
  • 1 tablespoon olive oil
  • 8 tortillas
  • 2 cups chicken - cooked, cubed
  • 1 cup spinach
  • 1/4 cup cilantro - chopped
  • 2 cups cheese - quesadilla works best
  • 1/2 cup sour cream (optional)

PICO DE GALLO:
  • Combine tomatoes, onions, green peppers and jalapenos in a small bowl. Add seasonings and lime juice. Allow to sit 30 minutes.
QUESADILLAS:
  • In a medium non-stick skillet, melt butter over medium heat.
  • Add onions and green peppers; cook until translucent, 8-10 minutes.
  • Add garlic and cook 1 minute. Set aside.
  • Using a large grill pan, heat oil over medium heat.
  • Assemble quesadillas by placing desired fillings (chicken, onion/pepper mixture, cilantro, spinach and cheese) to cover 1/2 of the tortilla. Fold over the tortilla.
  • Lay in the prepared skillet. Cook on each side 3-5 minutes until slightly browned.
  • Remove from skillet. Cut into 3 triangles. Serve with pico de gallo and sour cream.
