White Bean Chicken Chili Recipe

  • Presoaked white beans (navy)
  • 6 cups chicken stock
  • Fresh crushed garlic
  • 1 1/2 cups chopped onion, divided
  • 1/2 cup chopped green pepper (chilies or jalapenos optional)
  • 2 cups diced cooked chicken
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 1/2 teaspoons basil
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper

  • Combine soaked beans(drained), chicken stock, garlic and 1 cup of chopped onion. Bring to boil, reduce heat and simmer until beans are tender (1-2 hours).
  • Sauté pepper and additional 1/2 cup onion until tender; add in with beans.
  • Add spices and chicken; simmer 1 hour.
  • To thicken use 1/2 cup cold water and 2 tablespoons cornstarch, if desired.
