Potato Soup Recipe

Ingredients
  • 6 potatoes, cut into bite size pieces
  • 2 leeks (optional)
  • 2 onions chopped
  • 1 stalk celery sliced
  • 5 cups water
  • 1 tablespoon salt
  • 1/3 cup butter
  • 13 ounces can evaporated milk

  • Combine all above ingredients except the evaporated milk in crock pot.
  • Cover and cook 10 - 12 hours on low or 3 - 4 hours on high.
  • Stir in milk the final hour.
  • Sprinkle with chives just prior to serving.
