Lentil Soup Recipe

Ingredients
  • 1/4 pound diced bacon
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 cup diced potato
  • 1 cup washed lentils
  • 1 quart beef bouillon
  • Ham hock (optional but best for flavor)
  • 1 cup diced ham
  • 1/4 cup flour
  • Salt and pepper
  • Nutmeg
  • 2 tablespoons parsley, minced

  • Sauté bacon. Add onion, celery, carrot, & potato. Sauté for 5-10 minutes.
  • Add lentils, beef stock, ham hock, ham, flour, and spices and mix well.
  • Simmer for 1 to 1 1/2 hours.
