Baked Potato Soup Recipe

Ingredients
  • 6 - 8 Baked Potatoes, peeled & cubed (can leave skin on if desired)
  • 2/3 cup butter or margarine
  • 7 tablespoons flour
  • 7 cups milk
  • 1 - 2 C. diced ham if desired
  • 1 cup chopped or diced onion or 1 bunch green onion chopped
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream

  • Over medium heat, melt butter.
  • Add onions and cook until tender.
  • Add flour stirring well.
  • Gradually add milk and stir until smooth.
  • Add potatoes, bacon, and ham.
  • Add cheese and sour cream and continue to cook on low heat until melted and ready to serve.
  • Serve with garnish of green onions and cheese if desired.
