Pumpkin Butterscotch Cookies Recipe

Ingredients
  • 1/2 cup shortening
  • 1 cup Sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups butterscotch chips
Directions
Preheat oven to 350°. Grease cookie sheets. In medium bowl, cream shortening and sugar. Stir in pumpkin and vanilla. Stir together flour, salt, baking soda, baking powder and cinnamon; stir into creamed mixture. Then mix in butterscotch chips. Drop dough by teaspoonfuls onto prepared cookie sheets. Bake 8-10 minutes in preheated oven. Allow cookies to cool 1 minute on cookie sheets before transferring to wire cooking racks.
