Great Pumpkin Cookies 3 Recipe

Ingredients
  • 2 cups flour
  • 1 cup quick oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon cinnamon
  • 1 cup margarine, softened
  • 1 cup Brown Sugar
  • 1 cup white sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 cup solid pack Pumpkin
  • 1 cup butterscotch chips
  • chocolate chips
  • candy corn
Directions
Combine flour, oats, baking soda, salt, and cinnamon, and set aside. Cream butter and sugars beating until light and fluffy. Add egg and vanilla, then stir in pumpkin. Gradually add in dry ingredients. Last, stir in butterscotch chips. For each cookie drop 1/4 C. dough onto greased cookie sheet. With a thin metal spatula, spread into pumpkin shape, forming a small stem. Bake about 20 minutes, until cookies are firm and lightly browned. Remove and cool on racks. Makes about 20 pumpkin cookies. Decorate using icing or peanut butter to affix assorted raisins, candy corn or chocolate chips to make faces on the pumpkins!

My kids enjoyed making these each year! I usually doubled the recipe to use a whole can of pumpkin. And as the kids grew up, I would just make a drop cookie and leave off the decorations.
