Cajun Potatoes Recipe

Ingredients
  • -12 small red potatoes, unpeeled and thinly sliced
  • 1 1/2 cups cheddar cheese, grated and divided
  • 1 teaspoon chili powder
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper
  • 1 cup half and half

  • Preheat oven to 350 degrees F. Spray bottom of a 9 x 13 inch baking dish with Pam.
  • Place a layer of potatoes and sprinkle with 1/3 of cheese, chili powder and red pepper flakes.
  • Season with salt and pepper. (Can put chili powder and red pepper flakes on each layer - adjust if needed).
  • Repeat layering two more times, leaving grated cheese off top layer.
  • Pour the half and half over layered potatoes.
  • Place uncovered dish in oven and bake at 350 degrees F. for 1 hour.
  • Remove from oven. Sprinkle reserved 1/2 cup cheddar cheese over mixture and return to oven. Bake an additional 20 minutes.
