Breakfast Cookies Recipe

Ingredients
  • 1/2 cup peanut butter
  • 1 cup butter
  • 3/4 cup sugar
  • 1/2 cup honey
  • 2 Eggs
  • 1 teaspoon vanilla
  • 1 cup flour (white or wheat or combination)
  • 1/2 cup oat bran
  • 1/2 cup wheat germ
  • 1/4 teaspoon salt
  • 1 1/4 teaspoons soda
  • 1 teaspoon baking powder
  • 2 cups oatmeal
  • 2 cups crushed corn flakes or other cereal
  • 1/2 cup coconut or nuts
  • 1/2 cup raisins, or other dried fruit of choice
Directions
Preheat oven to 350. Cream first 4 ingredients in a large bowl. Add eggs and vanilla, mix well. Stir in dry ingredients until well combined. Fold in cereal, nuts/coconut, and dried fruit. Drop by tablespoons onto cookie sheet, spacing about 1 1/2 - 2" apart. Bake for 10 -12 minutes. Cool slightly on cookie sheet before removing. Makes about 3 dozen good sized cookies.
