Salted Nut Roll Bars Recipe

Ingredients
  • 1 box yellow cake mix (with pudding)
  • 1/2 cup melted margarine
  • 1 egg
  • 3 cups mini marshmallows
  • 2/3 cup corn syrup
  • 1/2 cup margarine
  • 2 teaspoons vanilla extract
  • 12 ounces peanut butter chips
  • 1 1/2 cups salted peanuts

  • Preheat oven to 350ºF. Combine the cake mix, the 1/2 cup of melted margarine, and the egg. Pour the batter into a 9- X 13-inch pan and bake 12-15 minutes.
  • Place the marshmallows on top of the baked cake layer and return to the oven until the marshmallows puff up.
  • In a saucepan, combine the corn syrup, the other 1/2 cup of margarine (not pre-melted), vanilla extract, and peanut butter chips. Melt over medium heat; then pour the mixture over the puffed marshmallows.
  • Sprinkle on the peanuts and press lightly into the syrup mixture. Refrigerate before slicing.
