Oatmeal Cookies Recipe

  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup shortening
  • 2 eggs, well beaten
  • 2 teaspoons vanilla
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups oatmeal
  • 1 cup nuts, raisins, coconut, or chocolate chips (optional)
Container: Cookie sheet

  • In a large bowl, cream together the white sugar, brown sugar, and shortening.
  • Add the eggs and vanilla; mix well.
  • In a separate bowl, combine the flour, salt, baking soda, and baking powder. Add this dry mixture to the creamed mixture and mix well.
  • Stir in the oatmeal.
  • Add your choice of nuts, raisins, coconut, or chocolate chips.
  • Drop by the teaspoonful on a greased cookie sheet.
  • Bake 12 minutes at 375ºF.
  • Cool on wire racks.
