Zucchini Cake Recipe

Ingredients
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 2 cups zucchini - not peeled and grated
  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1/2 cup butter
  • 8 ounces cream cheese
  • 1 package powdered sugar
  • 1 teaspoon vanilla extract

  • Mix eggs, sugar, oil and vanilla together.
  • Sift dry ingredients together and add to mixture along with the zucchini.
  • Bake at 325° F for 40 minutes in a 9 X 13 pan.
  • For the frosting cream together the butter, cream cheese, powdered sugar and vanilla.
  • Spread on the cooled cake.
