Rhubarb Cake with Cinnamon and Sugar Recipe

Ingredients
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1/2 cup shortening
  • 1/2 teaspoon salt
  • 1 cup milk or buttermilk
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 cups rhubarb
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

  • Preheat Oven to 350 degrees F. Grease the bottom and sides of the cake pan.
  • Mix brown sugar, egg, shortening, and salt. Beat well.
  • Stir in milk, flour, baking soda, vanilla, and rhubarb; pour into a greased 9 x 13 pan.
  • Mix the cinnamon and sugar together and sprinkle over the top of the cake.
  • Bake for 45 minutes.
