Ingredients
1/2 pound ground beef
2 cups potatoes - shredded
1/4 cup onion - minced
3/4 teaspoon salt
6 eggs
1/4 cup milk
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese

Brown meat and onion, saving 1 tablespoon of grease.
Add potatoes to casserole dish, sprinkle the grease over the potatoes.
Cover and microwave 4 to 6 minutes or until potatoes are tender.
Sprinkle with 1/4 tsp salt.
Combine eggs, 1/2 tsp salt, milk and pepper, and pour over potatoes.
Sprinkle meat on top.
Microwave uncovered 3 minutes.
Lift edges with spatula so uncooked portion spreads evenly.
Reduce power to medium and microwave 8 to 14 min or until eggs are almost set, rotating dish during cooking.
Add cheese the last 2 min of cooking.
Let stand loosely tented with foil 2 minutes before serving.
