APRICOT NUT BARS Recipe

Ingredients
  • 4 eggs, well beaten
  • 2 1/2 cups firmly packed light brown sugar
  • 1 can evaporated milk (tall can)
  • 2 tablespoons Lemon Juice
  • 2 1/2 cups sifted flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon Salt
  • 1 cup chopped dried apricots
  • 1 cup chopped walnuts
  • 1 cup flaked coconut
  • Powdered sugar
Directions
In a large mixing bowl, combine beaten eggs, brown sugar, evaporated milk and lemon juice. Sift together dry ingredients and add all at once to egg mixture. Stir just until blended. Fold in apricots, walnuts and coconut. Do not overmix. Divide batter and smooth evenly in two well greased jelly roll pans (15-1/2 x 10-1/2 x 1). Bake in 350° oven for 20 minutes. Allow to cool in pans before sprinkling with a light topping of powdered sugar. Cut into bars and store in airtight cookie jar. Yield: Approximately 5 dozen bars.
